Last night, I made dinner for Sweetie – We’re trying new things out to see what we like and don’t like.  Last night was a 50/50 split.

I’d been hungry for Stuffed Peppers for a while – not quite sure why, because I only ever really liked Grammy’s peppers, but I really wanted them.  I found a recipe on one of my Weight Watcher’s Yahoogroups and it looked good, so I thought I’d check it out.  Mexican Stuffed peppers.  It was simple enough, ground beef, garlic, onion, cumin, cinnamon, vinegar, brown sugar, brown rice, stuffed in cleaned out green bell peppers.  I then put a jar of salsa over it and tossed it in the oven for a half hour.  While it smelled good, it simply wasn’t as good as I wanted it to be.  Sweetie isn’t a fan of peppers on their own, but he said the filling was ‘passable’.  I don’t think we’ll be recycling this one again.  5 POINTS, but it really wasn’t worth it.

However, I made some yummy brown rice pudding.  It was fantastic!  Brown Rice, milk, sugar, cranberries, and vanilla.  (I tweaked it a little bit, used all cranberries instead of cranberries and raisins and vanilla instead of the almond extract).  It was good warm, which is how I had it, and Sweetie had it cold with a little vanilla soy milk on it, and said it was really good that way.  The recipe was out of one of my Weight Watchers cook books, and it was really hard to believe that the bowl was only 4 POINTS!  This is most definitely going to be one that we make again. (And again, and again….)
